Kimchi Bibim Guksoo (비빔국수)

Here’s the recipe for Kimchi Bibim Guksoo that I made for 1000 TikTok follower special (YAY!!!), which translates to mixed spicy Korean noodles or something like that. Just call it Bibim guksoo cause that’s easier lol. There’s many different ways of making bibim-guksoo, but this one is specifically using kimchi.

Ingredients

  • Somyeon* (2 Bundles)

  • Kimchi* (1 Cup)

  • Gochujang* (1 Tbsp)

  • Oligodang* (1 Tbsp)

  • Soy Sauce (0.5 Tbsp)

  • Sugar* (0.5 Tbsp)

  • Vinegar* (1 Tbsp)

  • Cooking Wine* (0.5 Tbsp)

  • Pepper (Your Liking)

  • Egg (1 Beaten)

  • Gim (1 Snack-size Piece)

  • Cucumber* (~4IN)

Korey's Note

  • Somyeon:* Any type of east-asian thin noodles should work.
  • Kimchi:* Make sure you don't use extra fermented ones. Those are for soups.
  • Gochujang:* I get the mild one because I can't eat spicy that well lol
  • Oligodang:* I replaced it with corn syrup, but I think oligo syrup is a little bit less sweet
  • Sugar:* Any color sugar is fine
  • Vinegar:* Any kind of vinegar is fine, UNLESS it's extra strong. then use less + water
  • Cooking Wine:* I skipped this because I don't have it
  • Cucumber:* I don't show it in the video cause I hate cucumbers but it's used as a garnish like eggs and Gim
